For some reason at Christmas time I buy enough food to feed 50 people when it is only 3 of us.
We have a turkey that feeds 8-10 people, ham joint, enough veg to keep a small army going strong plus all the cheeses because, well its Christmas and that’s what you do.
The problem with all this food is the left overs and trying to think of different ways to use it all up. Here is a few of my favourites, plus a recipe for turkey and sun-dried tomato risotto.
* Turkey curry (very Bridget Jones)
* Turkey and ham pie
* Turkey soup (made with turkey bones)
* Sweet and sour turkey
* Turkey club sandwiches
* Risotto (see below recipe)
Turkey & sun–dried tomato risotto
* Risotto rice
* sun-dried tomato
* chicken stock
Lightly fry the onion and add the rice coating it in the oil
slowly add the stock and continue to stir
once all the stock is absorbed add the turkey & sun-dried tomato
stir through and add a small handful of cheese to make it extra creamy.
